I’m dating myself, but I still remember when Chia Pets, the seed-filled clay animals were advertised on TV around the holidays. Who would have believed we’d be eating Chia seeds now, for health.
Actually, although closely related to Chia Seed Pet chia seeds, these chia seeds are of an edible variety, closely related to the plant seeds.
And I can’t deny they can take a bit of getting used to. They’re reminiscent of a poppy seed, only smaller and their superpower is their ability to pick up surrounding moisture and swell up to promote fullness and soften their bite. A chia seed can absorb up to 12 times its weight in liquid. Wow.
Their other superpower is their nutritional profile. Full of omega-3 fats and fiber, these tiny seeds pack a wallop of nutrition in a tiny seed.

Heart Healthy Blackberry Chia Pudding Parfaits

Ingredients
Chia Pudding
- 1-1/2 cups blackberries (can also sub raspberries and/or blueberries can be fresh or frozen
- 1 cup almond milk, unsweetened (or milk of choice)
- 1/4 cup chia seeds
- 1 Tbsp honey
- 1 tsp vanilla
Parfaits
- 1 cup vanilla flavored Greek yogurt (can add more yogurt, as desired)
- 3/4 cup granola of choice
Instructions
- Add fruit and milk to blender or a food processor. Mix until smooth. Add contents to a refrigerator bowl with a lid. Mix in chia seeds, honey and vanilla. Cover and refrigerate overnight and up to 5 days.
Parfaits
- In 1-6 parfait glasses, layer a few tablespoons of chia seed mixture in bottom, add amount of vanilla yogurt desired. Repeat, ending with a dollop of yogurt. Sprinkle granola over top.
