Heart Healthy Blackberry Chia Pudding Parfaits

These are really delicious! Don't let the Chia seeds put you off.

Ingredients

Chia Pudding

  • 1-1/2 cups blackberries (can also sub raspberries and/or blueberries can be fresh or frozen
  • 1 cup almond milk, unsweetened (or milk of choice)
  • 1/4 cup chia seeds
  • 1 Tbsp honey
  • 1 tsp vanilla

Parfaits

  • 1 cup vanilla flavored Greek yogurt (can add more yogurt, as desired)
  • 3/4 cup granola of choice

Instructions

  • Add fruit and milk to blender or a food processor. Mix until smooth. Add contents to a refrigerator bowl with a lid. Mix in chia seeds, honey and vanilla. Cover and refrigerate overnight and up to 5 days.

Parfaits

  • In 1-6 parfait glasses, layer a few tablespoons of chia seed mixture in bottom, add amount of vanilla yogurt desired. Repeat, ending with a dollop of yogurt. Sprinkle granola over top.

Notes

I make the chia seed mixture, leave in refrigerator and layer one parfait each morning! Delicious. Really!
